I know that they are typically looking to find out if the coaches or managers are creepers, but what else are the tournament directors looking for in the background checks?

I remember in soccer many many moons ago, if you had any type of infaction, they would post it on the governing bodies website. You could see if there was a DUI and that they were limited to only driving their own kids or if there was even a shoplifting incident from when they younger.

What you mentioned with the DUI, but also anything related to lack of self control, like domestic abuse, bar fights; and fraud, misappropriation of funds, theft, etc. In short, evidence of low character. Maybe drug abuse, although I doubt smoking a joint would disqualify anyone. As long as it's not with the team.
