OK, I'll give you my experience. First and foremost if you're taking a backpack, maybe get a cheap one, use it, see what works and what doesn't, then find the one you need. Case in point, this past season I bought the coaches bat packs just like the players got. While they served their purpose, I wasn't very pleased with the level of organization you get out of a generic bat pack. Next time I will get something different.
As far as what goes in, it kind of depends:
I ALWAYS carry a spare shirt and socks. I follow Lt. Dan's rule about my feet. And it's always handy to have a spare shirt, be it rain or a fight with an unruly mustard bottle.
During high school ball, I tend to carry.....my closet with me.
As far as stuff goes, maybe that's a little dependent on what age group you're coaching. I usually have:
A small compartment container (like for jigs for your fisherman) to keep screws for helmets, T-nuts, etc.
A small roll of duct tape, preferable in team colors.
Jim Beam BBQ Sunflower seeds.
Bacitracin (a myriad of uses)
Travel size body powder
Regular and phillips screwdriver
Regular and needlenose pliers
Dental floss, I know, I know, but it works better than the corner of a lineup sheet
Light pullover
Pens/pencils/ notepad, I'm a note taker, because I can't remember what I was doing five minutes ago. I see things I write it down. I buy like a pack of three of the little note books you can put in your back pocket at Wal-Mart and keep them in my pack
I have a charger for my phone, but that's a whole other story. Let me just say if you're looking at getting a Razr Droid don't the battery life SUCKS!
Reading glasses.....OK, there's your soft toss right over the plate
Contact solution
Spare contacts for my DD, because even though I told her to bring spares, I know she didn't
Umbrella, sometimes
Utility knive
Fingernail clippers
Tweezers
Allergy pills
Immodium (what can I say I love the concession stand, but sometimes it don't love me back)
A couple of trash bags, to put wet clothes in, and also to put my backpack in if it rains
A copy of my DD's DL and Birth Certificate
Hand sanitizer
Lotion, I know, I know, but particularly in the cooler times of the year, my skin gets dry. You don't get to be as old as I am and still look as good as I do without a little maintenance
Lastly iPod shuffle, and probably my iPad this summer for scorekeeping purposes.
Some of this stuff is totally me being me and stuff I think "I" have to have or want with me.
