how is this scored for the books when a batter is awarded first base because of the batter coming into contact with the catcher (mitt) on the swing?

It is scored as an error on the catcher. Generally, anytime a runner (or the batter) advances a base as a result of obstruction (even if the obstruction is on another runner), an error is charged.

An error is charged on the catcher, but the batter reaches first on Int/Obs so it doesn't count as an At Bat and has no effect on their batting stats.
