Given all the different regions represented on HB...
Our Southern main courses are usually Turkey, sometimes fried turkey...cornbread dressing etc...I'm originally from Ohio so I remember bread dressing my Grandmother made...Whats on your dinner table with the Holiday meals?

And I wish everyone a Merry Christmas and a Wonderful, Happy New Year!

I love a good meal. :D So.Cal.
We have 2 Christmas meals, Christmas Eve our house, Christmas day Nana house.
Christmas Eve: Roast Beast, Yorkshire pudding(made from drippings) either fingerling or small potatoes, carrots then pie.
Christmas day: Menudo and tamales.
Gen. knowledge: Tried first attempt at a smoked turkey this last Thanksgiving. (damn good)
Next time it gets rapped in bacon to protect skin. and will use apple wood instead of Mesquite. JMO Came out a little too smokey.
PS Rutabagas are served on our Thanksgiving table.
I see further, because I stand on the shoulders of giants

Orange County, Socal:
Thanksgiving:
turkey (oven) with stuffing.
baked ham
Green bean casserole,
yams with pineapples and marshmallows.
rolls
deviled eggs
mashed potatoes and gravy
cranberry sauce
pork and beans
chocolate, pumpkin, and blueberry pies.

Christmas
usually the same, but this year my wife said she is going to be tired, so we are getting honey baked ham.
We usually get tamales also so the kids have something to unwrap :D
Deserve's got nothin' to do with it.

Christmas Eve at our house (OC, CA:) for both sides of the family
- Wine, beer and lots of appetizers
- Used to have 7 kids (cousins) running around, but they're almost all grown up now.
- Non-traditional meal - usually Italian (Chicken Marsala & pasta), but sometimes Mexican.
- Dessert is baked by my wife - several types of cookies, bars and pies.

Christmas Day at my sister's house (Carlsbad) has evolved over the years to a less traditional meal
- Wine, beer and appetizers
- Roast pork, salmon, roasted potatoes, veggies
- Dessert is my sister's homemade Trifle

Christmas Eve is usually either a full filet mignon or sometimes beef wellington- many courses (scallops, soup(NE Clam Chowder)

Made a Trifle last year too(My Mom's recipe)

My dad's Schpritz cookies as well

Christmas is usually a lasagna or a porkroast

Lots of Beer, Wine etc...

This year after talking to my Wife's relatives in Italy-(North near Swiss border) Found out they do non-stop 24 hour appetizers (more like Tapas) Thought that tmight be fun and easier

No not Wild Turkey...(especially in the bottle...Bro in law is a Baptist preacher)
Wild turkey isnt good used like a Holiday store turkey...BEST use of a wild turkey is to slice up its breasts and chicken fry it...
As far as side dishes...We usually eat the BIG meal with wife's family...all mine are dead or crazier than shit house rats...They'll bring everything from a nasty corn casserole (kids like it), mashed potatoes...you name it...Wife has 4 sisters and a brother...who all have grown kids, most of those have kids...so theres plenty of fooddesserts range from homemade ice cream to homemade pecan pies, and banana pudding...homemade chocolate cheesecake...cobblers, huge cakes......I'll make a mental note and post our entire course...

One time when a neighbors wife, whose husband was deployed in 2003...our DDs are still buddies...anyway she was SUPPOSED to be making a roast for our dinner on Christmas day...turkey gets kind of old after about 4 family get togethers....anyway she didn't cook it over enough heat in the crockpot, a good veterinarian could have had it back on its feet in a couple hours...raw...at 630pm...So we, made sure the local (non Christian) Chinese Restaurant was open.... and chowed down at the local Chinese buffet...that has become sort of a tradition for us on the 26th....

My simplified version...

2 oz Maker's Mark (or your favorite booze)
1 picture of a glass of eggnog
ice cubes (optional)

Sip your booze while looking at the picture. 8-)
