Stimp, there are a bunch of "exposure" events around where you'll pay an exorbitant entry fee, and you'll be spread out over three parks, with 120 teams, you'll have game times from hell, and you'll see a couple of local D3 coaches and if you're lucky, if you're very lucky, you see some fat guy wearing an Ohio State sweatshirt. Talk to those who have gone before you, they have some insight into what's what.
All that being said, you can easily fill your summer and fall schedule with decent exposure events, but you will have to travel. Keep in mind once your kids start high school, summer is only about 6-7 weeks long. Mix in a couple of ASA tournaments and you're summer's pretty well shot.
Some off the top of my head that we were pretty happy with:
4th of July event at Midwest (mostly local coaches, but a decent turnout)
Premiere qualifiers at Midwest
Homer Hawks Gold
Orland Park (Never went heard good things)
ASA 16U/A Nationals
Midland Magic Fall Showcase
Tennessee Fall and Summer Showcases
Ohio Stingrays Showcase
Local ASA qualifiers 16U/18U (usually pretty good local turnout)
Mixed bag doing round robins at local schools. Some will have multiple coaches there, some will not. It never hurts to ask. We played at Michigan last fall and I don't think they even had a coach there. In talking to one of the blues, he said the year before she had 12-15 coaches there.
Demarini as has been stated (we didn't go, heard good things)
Demarini Fall Showcase, it was last weekend. Great turnout last week.
St. Louis has a big one as well at the end of the fall, we were never good enough to get in.
There are a bunch more, do your homework. Our 14's played in Chattanooga over the weekend, I heard some good things about it. It all depends how far you want to travel, what your goals are, etc. We never really felt like we had SEC caliber kids, so we didn't opt for Colorado, Premiere, or doing the Georgia/Florida circuit. That's where you have to define your goals and chart a course.

1.Always look cool
2.Never get lost
3.If you get lost, look cool
